Simple and delicious oven roasted cabbage steaks seasoned with garlic, onion, and paprika for a perfect vegetarian side dish or main course.

- 1 medium head green cabbage, cored and cut into 1-inch thick steaks
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Optional garnishes: Fresh parsley, lemon wedges, balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Remove any outer leaves from the cabbage that are wilted or damaged.
- Place the cabbage on its core end and slice it into 1 inch thick “steaks.”
- In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, red pepper flakes (if using), salt, and pepper.
- Brush both sides of each cabbage steak generously with the olive oil mixture.
- Arrange the cabbage steaks in a single layer on the prepared baking sheet.
- Roast for 20 to 25 minutes, flipping halfway through, until the cabbage is tender and the edges are nicely browned and caramelized.
- Remove from the oven and garnish with fresh parsley and a squeeze of lemon juice, if desired. Serve immediately.
