  • 1 medium head green cabbage, cored and cut into 1-inch thick steaks
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Optional garnishes: Fresh parsley, lemon wedges, balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove any outer leaves from the cabbage that are wilted or damaged.
  3. Place the cabbage on its core end and slice it into 1 inch thick “steaks.”
  4. In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, red pepper flakes (if using), salt, and pepper.
  5. Brush both sides of each cabbage steak generously with the olive oil mixture.
  6. Arrange the cabbage steaks in a single layer on the prepared baking sheet.
  7. Roast for 20 to 25 minutes, flipping halfway through, until the cabbage is tender and the edges are nicely browned and caramelized.
  8. Remove from the oven and garnish with fresh parsley and a squeeze of lemon juice, if desired. Serve immediately.
