Cool, creamy, and bursting with berries, this no bake berry icebox cake is the perfect easy summer dessert. Layers of graham crackers, whipped cream, and fresh berries come together for a refreshing treat that requires no baking!

- 4 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (14.4 ounce) package graham crackers
Instructions
- In a medium bowl, gently combine the mixed berries, granulated sugar, and lemon juice. Let sit for 15 minutes.
- In a large bowl, beat heavy whipping cream until soft peaks form. Gradually add powdered sugar and vanilla extract, beat until stiff peaks form.
- Spread a thin layer of whipped cream on the bottom of an 8×8 inch dish.
- Arrange a layer of graham crackers over the whipped cream.
- Spoon half of the berry mixture evenly over the graham crackers.
- Spread half of the remaining whipped cream over the berry layer.
- Repeat the layers: graham crackers, berry mixture, and whipped cream.
- For the final layer, spread the remaining whipped cream evenly over the top.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
- Cut into squares and serve chilled!
