- 1 cup fresh strawberries, hulled
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Puree strawberries in a blender until smooth. Set aside.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream butter and sugar until fluffy. Beat in eggs, then vanilla.
- Gradually add dry ingredients alternating with sour cream, beginning and ending with dry. Mix until just combined.
- Gently fold in strawberry puree.
- Pour batter into loaf pan and spread evenly.
- Bake for 50 to 60 minutes, or until a toothpick comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
