Description

  • 1 cup fresh strawberries, hulled
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Puree strawberries in a blender until smooth. Set aside.
  3. In a bowl, whisk together flour, baking soda, and salt.
  4. In another bowl, cream butter and sugar until fluffy. Beat in eggs, then vanilla.
  5. Gradually add dry ingredients alternating with sour cream, beginning and ending with dry. Mix until just combined.
  6. Gently fold in strawberry puree.
  7. Pour batter into loaf pan and spread evenly.
  8. Bake for 50 to 60 minutes, or until a toothpick comes out clean.
  9. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
