Instructions
- Crush the chocolate sandwich cookies into fine crumbs.
- In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until well combined.
- Stir in the mint extract and green food coloring until the pudding is evenly tinted and flavored.
- Allow the pudding to set for about 5 minutes, or until it thickens to the desired consistency.
- In individual dessert cups or glasses, layer the cookie crumbs and mint pudding.
- Refrigerate the mint pudding dessert cups for at least 30 minutes.
