- **For the Crust:**
- 1 1/2 cups all purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 3 5 tablespoons ice water
- **For the Filling:**
- 12 ounces semi sweet chocolate, chopped
- 1 cup heavy cream
- 1/2 cup Irish cream liqueur (like Baileys)
- 2 large eggs
- 1/4 cup unsalted butter, softened
- Pinch of salt
Instructions
- 1. **Make the Crust:** In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- 2. Slowly add ice water, one tablespoon at a time, pulsing until the dough just comes together.
- 3. Wrap the dough in plastic wrap and chill for at least 30 minutes.
- 4. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough to fit a 9 inch tart pan with a removable bottom.
- 5. Press the dough into the tart pan and trim any excess.
- 6. Dock the bottom of the crust with a fork to prevent puffing.
- 7. Bake for 15 20 minutes, or until lightly golden. Let cool completely.
- 8. **Make the Filling:** Place the chopped chocolate in a heatproof bowl.
- 9. In a saucepan, heat the heavy cream over medium heat until simmering.
- 10. Pour the hot cream over the chocolate and let it sit for a minute to melt the chocolate
- 11. Stir until smooth.
- 12. Stir in the Irish cream liqueur, eggs, butter, and salt until well combined.
- 13. Pour the chocolate mixture into the cooled tart crust.
- 14. Bake for 25 30 minutes, or until the filling is set but still slightly soft in the center.
- 15. Let the tart cool completely at room temperature, then refrigerate for at least 2 hours before serving.
- 16. Optional: Garnish with whipped cream, chocolate shavings, or a dusting of cocoa powder.
