  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 medium potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn, fresh or frozen
  • 1 cup peas, fresh or frozen
  • 1 medium zucchini, diced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 to 7 minutes.
  2. Add the garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and add the diced tomatoes. Bring the mixture to a boil.
  4. Add the potatoes, green beans, corn, peas, and zucchini. Reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender.
  5. Stir in the Italian seasoning, salt, and pepper. Taste and adjust the seasonings as needed.
  6. Garnish with fresh parsley before serving.
