Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped kale or spinach
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add the minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the drained and rinsed chickpeas and diced tomatoes (with their juice). Stir to combine.
  5. Reduce the heat and simmer for 20-25 minutes, allowing the flavors to meld together. For a thicker consistency, use an immersion blender to partially blend the soup. Or, remove about 1 cup of the soup and blend it in a regular blender before returning it to the pot.
  6. Stir in the chopped kale or spinach and cook until wilted, about 2-3 minutes.
  7. Stir in the lemon juice and season with salt and pepper to taste.
  8. Serve hot and enjoy.
