- 2 boneless, skinless chicken breasts (about 6 ounces each)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 4 sub rolls or hoagie rolls
- 4 cups chopped romaine lettuce
- 1/2 cup croutons
- Extra Parmesan cheese for garnish (optional)
Instructions
- 1. Prepare the Chicken: In a small bowl, whisk together olive oil, garlic powder, salt, and pepper. Rub the mixture evenly over chicken breasts.
- 2. Grill the Chicken: Preheat grill to medium heat. Grill chicken for about 6-8 minutes per side, or until an internal temperature of 165°F (74°C) is reached. Let chicken rest for 5 minutes, then slice thinly.
- 3. Make the Caesar Dressing: In a medium bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce. Season with salt and pepper.
- 4. Assemble the Sandwiches: Cut subs and spread caesar dressing on the insides of each role.
- 5. Add Fillings: Layer romaine lettuce down first, then topped with sliced grilled chicken and croutons.
- 6. Serve immediately.
