  • 1 ounce green food coloring (gel recommended)
  • 1 cup boiling water
  • 8 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. In a separate bowl, combine buttermilk, oil, eggs, cocoa powder, vanilla, and green food coloring.
  4. Gradually add wet ingredients to dry ingredients, mixing on low until combined.
  5. Slowly pour in boiling water while mixing on low.
  6. Divide batter evenly between cake pans.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Let cakes cool in pans for 10 minutes before inverting onto a wire rack.
  9. Prepare cream cheese frosting by beating cream cheese and butter until smooth.
  10. Gradually add powdered sugar, mixing on low until combined. Add vanilla and milk/cream to reach desired consistency.
  11. Once cakes are cool, frost top of one layer, place second layer on top, and frost entire cake.
  12. Decorate as desired.
