  • 1 jalapeño pepper, seeded and finely minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the diced mangoes, thinly sliced red onion, and diced red bell pepper.
  2. Add the chopped fresh cilantro.
  3. In a small bowl, whisk together the fresh lime juice, olive oil, minced jalapeño pepper, sea salt, and black pepper.
  4. Pour the dressing over the mango mixture and gently toss to combine.
  5. Taste and adjust seasonings as needed. You may want to add a little more lime juice for extra tang or a pinch of salt to enhance the sweetness of the mangoes.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
