- 2 ripe mangoes, peeled and diced
- 1/2 red onion, thinly sliced
- 1 red bell pepper, seeded and diced
- 1/2 cup chopped fresh cilantro
- 1/4 cup lime juice, freshly squeezed
- 1 tablespoon olive oil
- 1 jalapeño pepper, seeded and finely minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the diced mangoes, thinly sliced red onion, and diced red bell pepper.
- Add the chopped fresh cilantro.
- In a small bowl, whisk together the fresh lime juice, olive oil, minced jalapeño pepper, sea salt, and black pepper.
- Pour the dressing over the mango mixture and gently toss to combine.
- Taste and adjust seasonings as needed. You may want to add a little more lime juice for extra tang or a pinch of salt to enhance the sweetness of the mangoes.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Before serving, give the salad another gentle toss. Serve chilled and enjoy!
