Fresh Cucumber Tea Sandwiches: The Easiest Recipe Ever

  • Total Time: 15 minutes
  • Yield: 24 sandwich bites 1x

Description

These fresh cucumber tea sandwiches are a delightful and elegant treat. They are perfect for afternoon tea, bridal showers, or a light lunch. The cool, crisp cucumbers, the creamy cheese spread, and the soft bread deliver a refreshing escape.

Ingredients

Scale
  • 1 English cucumber, thinly sliced
  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 loaf of white bread, crusts removed
  • Optional garnish: dill sprigs

Instructions

  1. Prepare the cucumber: Wash and thinly slice the cucumber. If your cucumbers are particularly watery, you can lightly salt the slices and let them sit for 10 minutes to draw out excess moisture. Pat them dry with a paper towel.
  2. Make the cream cheese spread: In a medium bowl, combine the softened cream cheese, mayonnaise, fresh dill, fresh chives, lemon juice, salt, and pepper. Mix well until everything is smooth and fully combined.
  3. Assemble the sandwiches: Spread a thin layer of the cream cheese mixture on each slice of bread. Arrange the cucumber slices evenly over half of the bread slices.
  4. Top and cut: Place the remaining bread slices on top of the cucumber slices, creating sandwiches. Gently press the sandwiches together. Using a sharp knife, trim off the crusts and slice each sandwich into four small squares or triangles.
  5. Garnish and serve: Optional, garnish each sandwich with a small dill sprig. Serve immediately or chill for later.
