Ingredients

  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Green food coloring
  • 4 cups powdered sugar
  • ½ cup (1 stick) unsalted butter, softened
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Gold sprinkles or edible gold dust

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the almond extract and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough into two equal parts. Add green food coloring to one portion and mix until evenly colored.
  7. Roll out the dough to about ¼ inch thickness on a lightly floured surface.
  8. Use shamrock shaped cookie cutters to cut out the cookies. Reroll scraps as needed.
  9. Place the cookies onto the prepared baking sheets, leaving a little space between each cookie.
  10. Bake for 810 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. While the cookies are cooling, prepare the frosting. In a large bowl, cream together the softened butter and powdered sugar until smooth.
  13. Gradually add the milk and vanilla extract, mixing until the frosting reaches your desired consistency. Add more milk if needed.
  14. Once the cookies are completely cooled, frost them with the prepared frosting and decorate with gold sprinkles or edible gold dust.
