- 1 cup (2 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- Green food coloring
- 4 cups powdered sugar
- ½ cup (1 stick) unsalted butter, softened
- ¼ cup milk
- 1 teaspoon vanilla extract
- Gold sprinkles or edible gold dust
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the almond extract and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough into two equal parts. Add green food coloring to one portion and mix until evenly colored.
- Roll out the dough to about ¼ inch thickness on a lightly floured surface.
- Use shamrock shaped cookie cutters to cut out the cookies. Reroll scraps as needed.
- Place the cookies onto the prepared baking sheets, leaving a little space between each cookie.
- Bake for 810 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the frosting. In a large bowl, cream together the softened butter and powdered sugar until smooth.
- Gradually add the milk and vanilla extract, mixing until the frosting reaches your desired consistency. Add more milk if needed.
- Once the cookies are completely cooled, frost them with the prepared frosting and decorate with gold sprinkles or edible gold dust.
