Ingredients

  • 6 cups popped popcorn (air popped)
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Green food coloring (gel preferred)
  • 1/2 cup green candy coated chocolates (like M&Ms)
  • 1/4 cup green sprinkles

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a large bowl, pour the popped popcorn. Remove any unpopped kernels.
  3. In a medium saucepan, melt the butter over medium heat. Add the sugar, corn syrup, and salt. Stir constantly until the sugar is dissolved and the mixture comes to a boil.
  4. Once boiling, continue to cook for 5 minutes without stirring, allowing the mixture to turn into a light caramel.
  5. Remove from heat. Stir in vanilla extract and green food coloring.
  6. Carefully pour the caramel over popcorn, tossing to coat evenly.
  7. Spread popcorn on baking sheet in single layer.
  8. Bake for 60 minutes, stirring every 15 minutes.
  9. Remove from oven and let cool completely.
  10. Break apart large clumps. Stir in candy coated chocolates and sprinkles.
