A festive and easy to make green popcorn mix perfect for St. Patrick’s Day or any celebratory occasion.

- 6 cups popped popcorn (air popped)
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Green food coloring (gel preferred)
- 1/2 cup green candy coated chocolates (like M&Ms)
- 1/4 cup green sprinkles
Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
- In a large bowl, pour the popped popcorn. Remove any unpopped kernels.
- In a medium saucepan, melt the butter over medium heat. Add the sugar, corn syrup, and salt. Stir constantly until the sugar is dissolved and the mixture comes to a boil.
- Once boiling, continue to cook for 5 minutes without stirring, allowing the mixture to turn into a light caramel.
- Remove from heat. Stir in vanilla extract and green food coloring.
- Carefully pour the caramel over popcorn, tossing to coat evenly.
- Spread popcorn on baking sheet in single layer.
- Bake for 60 minutes, stirring every 15 minutes.
- Remove from oven and let cool completely.
- Break apart large clumps. Stir in candy coated chocolates and sprinkles.
