- 1 cup (2 sticks) unsalted butter, softened

- 2 large eggs

- 4 cups powdered sugar, sifted
- 3 tablespoons meringue powder
- 1/2 cup warm water
- Gel food coloring (various colors)
Instructions
- Preheat oven to 350°F (175°C).
- Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gradually add dry ingredients to wet ingredients until just combined.
- Divide dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 1 hour.
- Roll out dough to 1/4 inch thickness. Use Easter themed cookie cutters to cut out shapes.
- Place cookies onto prepared baking sheets, leaving about 1 inch between them.
- Bake for 8 to 10 minutes, or until edges are lightly golden.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Combine powdered sugar and meringue powder. Gradually add warm water until stiff peak forms.
- Divide icing into separate bowls and add gel food coloring to achieve your desired shades.
- Transfer icing to piping bags or squeeze bottles. Decorate cooled cookies as desired.
