These Crispy Zucchini Fritters are a classic recipe made with fresh zucchini, parmesan cheese, and a few simple ingredients. Perfect as an appetizer, side dish, or light meal! You can also create an air fryer zucchini version with this same recipe!

- 2 medium zucchini, grated
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1/4 cup all purpose flour
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying (or cooking spray for air fryer zucchini)
Instructions
- 1. Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15 minutes to drain.
- 2. Squeeze out as much excess moisture as possible from the zucchini.
- 3. In a bowl, combine the zucchini, egg, flour, Parmesan cheese, garlic, and pepper. Mix well.
- 4. Heat the olive oil in a skillet or preheat your air fryer to 375 degrees F (190 degrees C).
- 5. For skillet: Drop spoonfuls of the zucchini mixture into the hot oil and cook for 2 3 minutes per side, until golden brown.
- 6. For air fryer zucchini: Spray your air fryer basket with cooking spray. Working in batches, place fritters in a single layer into the air fryer basket. Cook for approximately 8 10 minutes, flipping the fritters halfway through, until golden brown and crispy.
- 7. Remove the fritters and place them on a paper towel lined plate to drain excess oil.
- 8. Serve immediately.
