Description
These crispy Reuben egg rolls combine the classic flavors of a Reuben sandwich in a fun, easy-to-eat appetizer. Corned beef, sauerkraut, Swiss cheese, and Russian dressing are wrapped in wonton wrappers and air fried to perfection.

- 1 pound corned beef, thinly sliced and chopped
- 1 cup sauerkraut, well drained and chopped
- 1 cup shredded Swiss cheese
- 1/2 cup Russian dressing (store bought or homemade)
- 2 tablespoons chopped fresh parsley (optional)
- 24 wonton wrappers
- 1 egg, beaten (for egg wash)
- 2 tablespoons water (for egg wash)
- Cooking spray (for air frying)
Instructions
- In a large bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, Russian dressing, and parsley (if using). Mix well.
- In a small bowl, whisk together the egg and water to create the egg wash.
- Lay a wonton wrapper on a clean surface. Place about 2 tablespoons of the Reuben filling in the center of the wrapper.
- Brush the edges of the wonton wrapper with the egg wash.
- Fold the wrapper over the filling to form a triangle, rectangle or roll, ensuring all edges are sealed tightly.
- Repeat steps 3-5 with the remaining wonton wrappers and filling.
- Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray.
- Place the prepared egg rolls in a single layer in the air fryer basket, being careful not to overcrowd them. You may need to cook them in batches.
- Air fry for 6-8 minutes, flipping halfway through, until the egg rolls are golden brown and crispy.
- Remove the crispy reuben egg rolls from the air fryer and let them cool slightly before serving.
