  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 cup all purpose flour, seasoned with salt and pepper
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs, seasoned with dried oregano and garlic powder
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil, for frying
  • 8 slices fresh mozzarella cheese (about 1/4 inch thick)
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. 1. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, pound the chicken to about 1/4 inch thickness. Slice the chicken breasts horizontally to create thin pockets.
  2. 2. Carefully stuff each chicken breast with two slices of fresh mozzarella cheese and a sprinkle of chopped fresh basil. Secure the edges with toothpicks.
  3. 3. Set up three shallow dishes with seasoned flour, beaten eggs, and panko mixture.
  4. 4. Dredge each chicken breast in flour, then egg, then panko mixture.
  5. 5. Heat olive oil in a large skillet over medium heat. Fry chicken for 4–5 minutes per side, until golden brown and cooked through. Internal temperature should reach 165°F (74°C).
  6. 6. Remove from skillet, drain on a wire rack, remove toothpicks, and serve hot.
