Description
Crispy chicken schnitzel stuffed with melted mozzarella cheese. A quick and easy family friendly weeknight meal!

- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 cup all purpose flour, seasoned with salt and pepper
- 2 large eggs, beaten
- 2 cups panko breadcrumbs, seasoned with dried oregano and garlic powder
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil, for frying
- 8 slices fresh mozzarella cheese (about 1/4 inch thick)
- 1/4 cup fresh basil leaves, chopped
Instructions
- 1. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, pound the chicken to about 1/4 inch thickness. Slice the chicken breasts horizontally to create thin pockets.
- 2. Carefully stuff each chicken breast with two slices of fresh mozzarella cheese and a sprinkle of chopped fresh basil. Secure the edges with toothpicks.
- 3. Set up three shallow dishes with seasoned flour, beaten eggs, and panko mixture.
- 4. Dredge each chicken breast in flour, then egg, then panko mixture.
- 5. Heat olive oil in a large skillet over medium heat. Fry chicken for 4–5 minutes per side, until golden brown and cooked through. Internal temperature should reach 165°F (74°C).
- 6. Remove from skillet, drain on a wire rack, remove toothpicks, and serve hot.
