This creamy Tuscan sausage soup is a comforting and flavorful dish that’s easy to make. With Italian sausage, potatoes, kale, and a creamy broth, it’s a hearty and satisfying meal.

- 1 pound Italian sausage, removed from casing
- 1 large yellow onion, diced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 5 medium Yukon gold potatoes, peeled and diced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes, or more to taste
- 1/2 teaspoon salt, or more to taste
- 1/4 teaspoon black pepper, or more to taste
- 1 bunch kale, stems removed and chopped
- 1 cup heavy cream
- Grated Parmesan cheese, for garnish
Instructions
- In a large pot or Dutch oven, brown the Italian sausage over medium heat, breaking it up with a spoon. Drain off any excess grease.
- Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
- Pour in the chicken broth and add the diced potatoes, dried oregano, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- Stir in the chopped kale and cook until wilted, about 3 minutes.
- Reduce heat to low and stir in the heavy cream. Heat through, but do not boil.
- Taste and adjust seasonings if needed.
- Serve hot, garnished with grated Parmesan cheese.
