Ingredients

  • 1 pound Italian sausage, removed from casing
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 5 medium Yukon gold potatoes, peeled and diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes, or more to taste
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon black pepper, or more to taste
  • 1 bunch kale, stems removed and chopped
  • 1 cup heavy cream
  • Grated Parmesan cheese, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the diced onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the diced potatoes, dried oregano, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Stir in the chopped kale and cook until wilted, about 3 minutes.
  5. Reduce heat to low and stir in the heavy cream. Heat through, but do not boil.
  6. Taste and adjust seasonings if needed.
  7. Serve hot, garnished with grated Parmesan cheese.
