  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more, until fragrant.
  2. Pour in crushed tomatoes, tomato sauce, and vegetable broth. Stir in dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  3. Bring the soup to a simmer, then reduce heat to low and cover. Let it simmer for 15 minutes to allow the flavors to meld.
  4. Stir in cheese tortellini and cook according to package directions, usually about 3 to 5 minutes, or until tortellini is tender.
  5. Remove the pot from the heat and stir in heavy cream and Parmesan cheese. Mix until the cheese is melted and the soup is creamy.
