- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes

- 4 cups vegetable broth (or chicken broth)
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 (9 ounce) package refrigerated cheese tortellini
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for garnish
- Fresh basil leaves, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more, until fragrant.
- Pour in crushed tomatoes, tomato sauce, and vegetable broth. Stir in dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste.
- Bring the soup to a simmer, then reduce heat to low and cover. Let it simmer for 15 minutes to allow the flavors to meld.
- Stir in cheese tortellini and cook according to package directions, usually about 3 to 5 minutes, or until tortellini is tender.
- Remove the pot from the heat and stir in heavy cream and Parmesan cheese. Mix until the cheese is melted and the soup is creamy.
- Ladle the creamy tomato tortellini soup into bowls. Garnish with extra grated Parmesan cheese and fresh basil leaves. Serve immediately.
