- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 1/2 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) can artichoke hearts, drained and quartered
- 5 ounces fresh spinach, roughly chopped
- 4 ounces cream cheese, softened
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large oven safe skillet over medium high heat. Sear the chicken breasts for about 3 4 minutes per side, until lightly browned. Remove and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 5 minutes. Add the minced garlic and cook for another minute.
- Stir in the quartered artichoke hearts and chopped spinach. Cook until the spinach is wilted, about 2 3 minutes.
- Reduce heat to low. Stir in the softened cream cheese until melted and smooth. Pour in the heavy cream and add the Parmesan cheese and Italian seasoning. Stir until well combined. Add red pepper flakes.
- Place the seared chicken breasts back into the skillet, nestling them into the sauce.
- Sprinkle the shredded mozzarella cheese over the chicken and sauce.
- Transfer the skillet to the preheated oven and bake for 20 25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Let the chicken rest for a few minutes before serving.
