- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving

- 1 pound pasta (penne, fettuccine, or your favorite shape)
Instructions
- Preheat oven to 450°F (232°C). Roast red peppers with olive oil, salt, and pepper for 20-25 minutes.
- Steam peppers in a covered bowl for 10 minutes, then peel off skins.
- Blend roasted peppers with vegetable broth until smooth.
- Sauté minced garlic and red pepper flakes (if using) in a skillet for 1 minute.
- Pour blended pepper mixture into skillet, simmer for 5 minutes, then stir in heavy cream and Parmesan cheese. Simmer 5 more minutes.
- Cook pasta according to package directions, reserving 1/2 cup pasta water.
- Add drained pasta to the skillet with the sauce, tossing to coat. Add pasta water if needed for consistency.
