- 1 (17.6 ounce) package gnocchi (shelf stable or refrigerated)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sun dried tomatoes, oil packed, drained and chopped
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup fresh basil, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, until fragrant, being careful not to burn it.
- Add the chopped sun dried tomatoes and red pepper flakes (if using). Cook for another minute, stirring occasionally.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese and let it melt into the cream, creating a smooth and creamy sauce. Season with salt and pepper to taste. Remember to taste as you go and adjust seasoning according to your preference.
- Add the gnocchi to the sauce. Gently stir to coat the gnocchi evenly.
- Cook according to the package instructions (usually 3 5 minutes), or until the gnocchi are heated through and slightly softened.
- Stir in the fresh basil.
- Serve immediately, garnished with extra Parmesan cheese and fresh basil, if desired.
