  • 1 pound boneless, skinless chicken breasts, cut into bite sized pieces
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 6 cups chicken broth
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned. Season with salt and pepper. Remove chicken and set aside.
  2. Add onion to the pot and cook until softened. Add garlic and mushrooms and cook until tender.
  3. Pour in chicken broth and bring to a simmer. Add tortellini and cook according to package directions.
  4. Stir in heavy cream, Parmesan cheese, and cooked chicken. Bring to a gentle simmer and cook until heated through. Do not boil.
  5. Stir in parsley and season with salt and pepper to taste.
  6. Serve hot, garnished with extra Parmesan cheese and fresh parsley.
