- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite sized pieces
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 6 cups chicken broth
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for garnish
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned. Season with salt and pepper. Remove chicken and set aside.
- Add onion to the pot and cook until softened. Add garlic and mushrooms and cook until tender.
- Pour in chicken broth and bring to a simmer. Add tortellini and cook according to package directions.
- Stir in heavy cream, Parmesan cheese, and cooked chicken. Bring to a gentle simmer and cook until heated through. Do not boil.
- Stir in parsley and season with salt and pepper to taste.
- Serve hot, garnished with extra Parmesan cheese and fresh parsley.
