- 2 tablespoons olive oil
- 1. 5 pounds boneless, skinless chicken thighs, cut into bite sized pieces
- 1 medium onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream or half and half
- 2 tablespoons chopped fresh parsley, for garnish
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 4 tablespoons melted butter
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until browned on all sides, about 5-7 minutes.
- Add the onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes. Stir in the garlic and cook for another minute until fragrant.
- Pour in the chicken broth, thyme, rosemary, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.
- While the soup is simmering, prepare the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt.
- Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
- Drop spoonfuls of the dumpling dough into the simmering soup. Cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Cover the pot for the first 10 minutes of cooking.
- Stir in the heavy cream or half and half. Simmer for another 5 minutes to heat through.
- Garnish with fresh parsley and serve hot.
