  • 1. 5 pounds boneless, skinless chicken thighs, cut into bite sized pieces
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream or half and half
  • 2 tablespoons chopped fresh parsley, for garnish
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 4 tablespoons melted butter

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until browned on all sides, about 5-7 minutes.
  2. Add the onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes. Stir in the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth, thyme, rosemary, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.
  4. While the soup is simmering, prepare the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the dumpling dough into the simmering soup. Cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Cover the pot for the first 10 minutes of cooking.
  7. Stir in the heavy cream or half and half. Simmer for another 5 minutes to heat through.
  8. Garnish with fresh parsley and serve hot.
