Ingredients

  • 1 cup plain Greek yogurt
  • 2 tablespoons honey, divided
  • 1/2 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi, peeled and diced
  • 1/2 cup pineapple, cored and diced
  • 1/4 cup raspberries
  • 1/4 cup granola, optional
  • Mint sprigs for garnish, optional

Instructions

  1. In a small bowl, combine the Greek yogurt with 1 tablespoon of honey. Stir well until smooth and creamy.
  2. Prepare your fruit by washing and chopping it into bite sized pieces.
  3. Begin assembling the parfaits. In two glasses or parfait dishes, layer yogurt mixture, strawberries, blueberries, kiwi, and pineapple.
  4. Add the last layer with raspberries.
  5. Drizzle the remaining honey over the top of each parfait. If desired, sprinkle with granola for added crunch.
  6. Garnish with mint sprigs, if desired. Serve immediately and enjoy!
