- 2 cups all purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 (21 ounce) cans cherry pie filling
- ½ cup cherry juice or water, if needed
- 3 cups heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Shaved chocolate, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 9 inch round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add buttermilk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
- Reduce speed and slowly pour in the boiling water, mixing until just combined. Batter will be thin.
- Divide batter evenly among the prepared cake pans. Bake for 30-35 minutes.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- In a large bowl, beat heavy whipping cream with an electric mixer until soft peaks form.
- Add powdered sugar and vanilla extract and continue beating until stiff peaks form. Be careful not to overwhip.
- Place one cake layer on a serving plate.
- Spread a layer of cherry pie filling over the cake.
- Top with a layer of whipped cream frosting.
- Repeat layering, then frost top and sides with remaining whipped cream.
- Garnish with chocolate shavings. Refrigerate before serving
