  • 2 (21 ounce) cans cherry pie filling
  • ½ cup cherry juice or water, if needed
  • 3 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Shaved chocolate, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 9 inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, oil, eggs, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for 2 minutes.
  4. Reduce speed and slowly pour in the boiling water, mixing until just combined. Batter will be thin.
  5. Divide batter evenly among the prepared cake pans. Bake for 30-35 minutes.
  6. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. In a large bowl, beat heavy whipping cream with an electric mixer until soft peaks form.
  8. Add powdered sugar and vanilla extract and continue beating until stiff peaks form. Be careful not to overwhip.
  9. Place one cake layer on a serving plate.
  10. Spread a layer of cherry pie filling over the cake.
  11. Top with a layer of whipped cream frosting.
  12. Repeat layering, then frost top and sides with remaining whipped cream.
  13. Garnish with chocolate shavings. Refrigerate before serving
