- 2 medium zucchini, halved lengthwise
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Optional: Red pepper flakes
Instructions
- Preheat air fryer to 400°F (200°C).
- Cut zucchini in half lengthwise and scoop out seeds, creating a boat.
- In a small bowl, combine olive oil, garlic powder, onion powder, oregano, salt, and pepper.
- Brush the zucchini halves with the olive oil mixture.
- In another bowl, mix together the mozzarella and Parmesan cheese.
- Fill each zucchini boat with the cheese mixture. Add red pepper flakes if desired.
- Place zucchini boats in the air fryer basket, being careful not to overcrowd.
- Air fry for 8-10 minutes, or until cheese is melted and golden brown.
- Carefully remove from air fryer and let cool slightly before serving.
