Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 1 sheet (14.1 ounces) frozen puff pastry, thawed
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add the thawed and squeezed spinach to the skillet. Cook for another 2 3 minutes, stirring occasionally, until any excess moisture has evaporated.
  4. In a large bowl, combine cream cheese, ricotta cheese, Parmesan cheese, and mozzarella cheese. Mix until well combined and smooth.
  5. Add the cooked spinach mixture to the cheese mixture. Season with salt, pepper, and nutmeg. Mix until everything is evenly combined.
  6. Unfold the thawed puff pastry sheet on a lightly floured surface.
  7. Cut the puff pastry into 12 squares.
  8. Spoon a generous tablespoon of the spinach cheese filling onto each puff pastry square.
  9. Fold the puff pastry squares over to form triangles (or any shape you like!). Press the edges together with a fork to seal.
  10. Place the filled puff pastries onto the prepared baking sheet.
  11. Brush the tops of the puff pastries with the beaten egg wash.
  12. Bake in the preheated oven for 15 20 minutes, or until golden brown and puffy.
  13. Let the cheesy spinach puff pastry appetizer puffs cool slightly on the baking sheet before serving.
