Description

A classic, comforting side dish of tender peas and sweet carrots, cooked in butter and seasoned to perfection. This buttery peas carrots recipe is quick, easy, and guaranteed to be a crowd pleaser.


Ingredients

  • 1 pound fresh or frozen peas
  • 1 pound carrots, peeled and sliced
  • 4 tablespoons unsalted butter
  • 1/4 cup vegetable broth (optional)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. 1. If using frozen peas, there’s no need to thaw them. If using fresh peas, shell them.
  2. 2. Peel and slice the carrots into rounds, about ¼ inch thick. You can also use baby carrots if you prefer.
  3. 3. Melt the butter in a medium saucepan over medium heat.
  4. 4. Add the sliced carrots to the saucepan and cook for about 5 7 minutes, or until they begin to soften.
  5. 5. Add the peas and vegetable broth (if using) to the saucepan.
  6. 6. Season with salt and pepper to taste.
  7. 7. Cover the saucepan and cook for another 5 7 minutes, or until the peas are tender and the carrots are cooked through.
  8. 8. Remove from heat and stir gently to combine.
  9. 9. Garnish with fresh parsley, if desired. Serve immediately.
