- 1 pound fresh or frozen peas
- 1 pound carrots, peeled and sliced
- 4 tablespoons unsalted butter
- 1/4 cup vegetable broth (optional)
- Salt and freshly ground black pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- 1. If using frozen peas, there’s no need to thaw them. If using fresh peas, shell them.
- 2. Peel and slice the carrots into rounds, about ¼ inch thick. You can also use baby carrots if you prefer.
- 3. Melt the butter in a medium saucepan over medium heat.
- 4. Add the sliced carrots to the saucepan and cook for about 5 7 minutes, or until they begin to soften.
- 5. Add the peas and vegetable broth (if using) to the saucepan.
- 6. Season with salt and pepper to taste.
- 7. Cover the saucepan and cook for another 5 7 minutes, or until the peas are tender and the carrots are cooked through.
- 8. Remove from heat and stir gently to combine.
- 9. Garnish with fresh parsley, if desired. Serve immediately.
