- 1 pound asparagus, trimmed
- 1/4 cup pesto (store bought or homemade)
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: 2 tablespoons grated Parmesan cheese
- Optional: 1 tablespoon toasted pine nuts
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the asparagus thoroughly. Snap off the tough ends.
- In a bowl, toss the asparagus with olive oil, salt, and pepper.
- Spread the asparagus in a single layer on a baking sheet.
- Roast for 8 to 12 minutes, or until the asparagus is tender crisp.
- Remove the asparagus from the oven and place it back in the bowl.
- Add the pesto to the bowl and toss gently to coat the asparagus evenly.
- Garnish with Parmesan cheese and toasted pine nuts, if desired.
- Serve immediately.
