- 1 cup quinoa, uncooked
- 2 cups water or vegetable broth
- 2 medium apples, diced
- 2 stalks celery, diced
- 1/4 cup red onion, finely diced
- 1/2 cup dried cranberries
- 1/2 cup toasted pecans or walnuts, chopped
- For the Dressing:
- 3 tablespoons apple cider vinegar
- 3 tablespoons olive oil
- 1 tablespoon maple syrup or honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
Instructions
- 1. Rinse the quinoa thoroughly under cold water.
- 2. Combine the rinsed quinoa with water or vegetable broth in a medium saucepan.
- 3. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and the quinoa is fluffy.
- 4. Remove from heat and let it cool completely.
- 5. In a small bowl, whisk together the apple cider vinegar, olive oil, maple syrup (or honey), Dijon mustard, salt, and pepper until well combined.
- 6. Taste and adjust sweetness or tanginess as needed.
- 7. In a large bowl, combine the cooled quinoa, diced apples, diced celery, diced red onion, and dried cranberries.
- 8. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- 9. Sprinkle the chopped toasted pecans or walnuts over the salad just before serving.
